A sudden craving for coconut cake 🙂
1.5 cups flour
1 cup coconut
1 cup sugar
1 teaspoon baking powder
1 cup milk
100g butter/full fat marg
2 large eggs
Cream the butter/full fat marg and sugar until smooth and creamy, add eggs then milk, cococnut, flour and baking powder. Do not over mix the batter but it should be blended nicely. Bake at 180C for, usually, 30 – 45 minutes.
